Salami di Calabria- blended with zesty spices and crushed red peppers.
The most southern region of Italy known as Calabria has a long history of spicy cuisine. This was due to the influence of the Moors from Northern Africa who were inhabitants of the region during the Middle ages. In addition, the introduction of pepperoncini (chilli) during the 16th century came from Columbus’s samples taken from the new world. Crushed red pepperoncini are added to our spice blend creating a zesty, but not overpowering, taste.
Ingredients:
Salt, Dextrose, spices, antioxidant, preservatives (Potassium Nitrate and Sodium Nitrite) and culture.
Salt – We used pure sea salt with no iodine added.It is imperative to use pure sea salt as no trace elements are contained. Mineral salts, although we have done trials with this, are not advisable due to trace elements ofminerals, which can have an adverse effect of the fermentation process. Salt is the most important compound used as it insolubilizes the moisture contained in the meats which prevents the growth of pathogens which could result in spoilage.
Spices – we are currently using spices imported from Italy, I do pay a premium for these spices. The company, which I procure the spices from, specializes in spices for cure meats. I might considerpremixing my own spices in the future. Trials are being conducted at the moment. It will not be possible to replicate the Calabria flavor (pepperoni), this spice will always be imported.
To be more specific:
Bergamo: Fellino spice, garlic and whole black pepper
Veneto: Napoli spice with added nutmeg
Toscana: Finocchiona spice
Calabria: Pepperoni spice
Antioxidant: Sodium ascorbate, this is essentially a pure form of Vitamin C and helps the salami maintain its reddish colour.
Preservatives: The nitrates and Nitrites are usually purchased premixed and added with salt and a colourant, we however procure the preservatives individually to ensure correct dosage. Essentially the nitrate breaks down to a nitrite over time, therefore basically, one can say that the nitrite is for immediate protection and nitrate ids for longer-term protection. Both these preservatives help to eliminate any traces of pathogens and bad bacteria, namely bocholusm, salmonella and ecoli.

Sometimes using plastic packaging is the only way to preserve the produce so we encourage you to please try to wash and reuse the plastic ziplock bags in your home.
When we deliver your order we will gladly take away any glass jars and bottles, veg boxes and other packaging that we ourselves or our suppliers can reuse.
